This is my go-to book for baking! I have not yet met a recipe i didn't like. I will usually substitute Guar Gum for Xanthan Gum as my son does not like the taste of Xanthan and occasionally substitute other flour blends if i have them around, but otherwise just follow the recipe. I found this book at the library and quickly decided that i needed to have it around all the time.
